Omelette
It takes about 10 - 15 minutes
Ingredients:
2 Eggs
1/4 cup chopped Red Bell pepper
1/4 cup chopped mushrooms
1/4 cup chopped onion ( any kind even green onions works)
1/4 cup chopped tomato
1/4 cup chopped ham
1/4 cup Bulgarian Feta cheese (optional)
2 slices American White or Gouda cheese
Olive oil
Salt
Pinch of cumin
Pinch of paprika
Olives for garnish
In a frying pan heat up the olive oil and add the bell pepper and the onion. Once the bell peppers have softened add the mushrooms, ham and tomato. Stir for 5 minutes.
In a mean time mix the eggs, feta cheese, salt, cumin and paprika in a bowl.
Add the eggs mixture to the frying pan, reduce heat to low and cover with a lid.
Let it cook until the eggs have hardened. Do not stir!
Garnish with olives or pickles, or anything else you like.
